I gave the food category a 3 star because I’ll be honest it was not the tastiest michelin starred food I’ve had. One of the “snack items” I can’t remember the name but it had such a strong mayonnaise and egg taste it was not a delightful bite… this other snack item honestly just tasted like a vietnamese fresh roll without the peanut butter sauce. The fish used in the hirame ceviche was difficult to cut and even biting it with my teeth was difficult. One other thing I wasn’t particularly thrilled with was that they served duck twice. They served Duck Pibil with the Nixtamal and then they served duck again with the Aged Duck course. It would be better if various forms of protein were served in my opinion. The plating style however was beautiful and the plates chosen were all unique and eye pleasing. The Hokkaido Scallop was the most delicious course overall, absolutely amazing! The Black Cod was cooked absolutely perfectly and it melted in my mouth. The A3 Wagyu was tastey but didn’t stand out to me and I disliked the creamed spinach on the side but that might just be my own taste buds. I also was excited because online the website menu said it would be A5 wagyu and when I asked the server for clarification she stated it was A5 however the handout given to me at the end stated it was A3 wagyu. The main dessert SK Wild Rice was phenomenal, I enjoyed every bite. The tiny chocolate dessert was also delicious and the sorbert as well. The little pumpkin/squash pie had too strong a seasoning and was almost a bit spicy which I did not prefer. 2. Now I want to discuss service. I’ll be honest and say the organization of the restaurant seemed a bit hectic. It seemed like all the staff were all over the place. It was so loud in the restaurant I struggled to hear our server. When the chef’s or servers would present and explain each dish it was also difficult to hear what they were saying. The tables were quite dark so whenever the server would come around to wipe the table they would miss spots. They changed cutlery between each course and had a long chopstick like stand to lean the cutlery on which I very much liked. I dislike when my cutlery touches the table so I want to say this was a great detail they added to the dining experience. Our server however was very nice and she refilled our water glasses multiple times. 3. Atmosphere. I’m the type of person that prefers a quieter atomosphere but there is nothing wrong with a louder one as well if that if your prefference. I personally didn’t like how it was so loud I needed to move closer to my mother to have a conversation and how I couldn’t properly hear the course explainations. One other thing I want to mention is the bathroom. Soap was dripping from the top of it and leaking out onto the counter, at a michelin star restaurant I personally expect it to be very cleanly. One last thing I want to mention that I disliked was when I was leaving the restaurant I wanted to ask a question to one of the staff members but they didn’t address me right away. Another staff member then walked infront of me and turned his back to me to speak with the other individual for a good 10 seconds before addressing me. I found that to be very rude and unprofessional. Having worked in the hospitality business all staff members should address customers the moment they make it clear they require assistance.
