I would recommend the tour to anyone who is interested in the process of making sparkling wine. We tasted lots of the wines after the tour and I purchased 2 bottles for a very reasonable price.

Stopped in to purchase a bottle of Blanquette de Limoux and the Owner was just about to start a tour of the cave. The process of assembling the wine for the Crèment and fermenting both the Crémant and the Blanquette (a single grape), is complicated and time consuming and M. Guinot explains the steps involved to arrive at the final product; it was very interesting. At the end we tasted several and had an opportunity to purchase product. Just over an hour and well worth it!

We had a fabulous tour of Maison Guinot with Michel. We were just 3 people who turned up for the 10.30 visit but Michel was more than happy to spend the next 90 minutes explaining the history of blanquette wine-making and showing us the processes, followed by a wine tasting. €5 per person gets you a fantastic tour and tasting experience at this small wine producer in Limoux. They are one of the few producers left that make the famous sparking wine using the traditional methods, choosing to do everything by hand rather than use machinery. The tour guide was incredibly knowledgeable and friendly, and even though we were on a French tour she took time to explain each key point to us in English. The tour ended with a tasting session of some of their wines, and they were truly amazing. The sparkling wine made in this area actually predates champagne, and it’s said that Dom Perignon stole the production methods when he toured the area and took them back to the champagne region.

A must visit tour of Maison Guinot in LImoux only about 20 mins from Carcassone and a bargain at 5euros. Limoux is famous for its sparkling wine (Blanquette and Cremant) made using the same method as champagne and records have been found that shows the people in Limoux provided the recipe to the champagne region. We have visited many wine houses and this tour and tasting was fantastic, both in French and English. The use of videos, sound and lights made the tour fascinating. The Blanquette and Cremant are both lovely and very reasonably priced.

Having not been in Limoux since before Covid, we were delighted to find that Le Concept was offering really nice food, a good welcome, and a charming owner. This Summer, we have eaten here and not been disappointed. We have brought guests with us quite a few times, too. Nestled in a charming vaulted-stone setting, L'Odalisque offers an intimate dining experience that is nothing short of exceptional. This bistronomic gem serves thoughtfully crafted seasonal dishes, showcasing high-quality ingredients at great value. The highlight of our visit was the indulgent lobster menu, featuring a delightful trio of courses including a lobster roll on brioche and a stunning whole lobster paired with squid-ink pasta.
I recommend booking a table in advance. It’s a very good place with affordable prices, big portions and wide range of wine. The staff is welcoming and friendly. There are some paintings in the wall you can buy. The atmosphere is very relaxing and provoking some south vibes.

Absolutely enjoyable dinner. Tucked in a beautiful vaulted-stone setting, the restaurant serves thoughtful, seasonal plates with precision and warmth. Each course was beautifully composed, and the plating is colorful, balanced, and a pleasure for both eyes and palate. Service is attentive without hovering, pacing is spot-on, and the value for the quality is excellent. Important: the restaurant operates by reservation only — but it’s absolutely worth planning ahead.

Our favorite place for an in-town treat. We finally indulged ourselves in the top-end homard (lobster) menu at L’Odalisque and it was quite the blowout. Three courses of homard: lobster roll on brioche, lobster montgolfière (hot air balloon crust over a bowl of lobster bisque and lobster chunks) and the main event of a whole lobster with squid-ink pasta. We were stuffed but somehow made room for their yummy desserts. We’re also learning this summer about the wines from Faugères, yum. Reservations are a must. Lots of locals dine here. Two items of note. (1) The exposed stone walls make for a very loud room. (2) The portions are generous, so pace yourself.

Actually, you could have guessed that you also need a reservation for lunch. So we came back a day later and got a nice table for two. The many awards at the entrance promise a lot of enjoyment. And the menu keeps the promise. Either a la carte or one of the numerous menus. the latter is optionally available with wine accompaniment. Speaking of wines. The prices are very fair for the high level and they are all available by glass. We ordered the L Odalisque menu with wines and were very full with the three courses. The flavors help too. Highly Recommended!

Friends took us to L'Odalisque, telling us that it's the best restaurant in Limoux. As the yellow plaques outside the door of the restaurant indicate, it consistently wins awards. It's a reservations-only restaurant; you can't simply walk in and ask for a table. The table d'hôte meal four of us chose was amazing and reasonably priced for such an outstanding meal. For entrées, the choices were filet de merlu (a filet of hake) with vegetables (asparagus, peas, carrots, broccoli, potatoes) in a sauce that the menu described as "crustacean" sauce — made from the reduction of shells of seafood like shrimp and crab; or chicken pieces cooked in a sauce that Karin, who chose it, called Moroccan, with coriander and cumin and ground peanuts. For salads, there was burrata with freshly made pesto and salad greens, a tapas platter, or a seafood salad. Among ourselves, we chose all three. With these items came a glass of wine. Some of us chose a local rosé and others a local white wine. The dessert menu was pretty large. I chose a pavé with vanilla flavoring and a scoop of chocolate ice cream on the side, and my dining companions had a lemon pudding-tart (I forget the exact description). The latter was spectacular. All this followed by cups of coffee that were part of the fixed-menu price…. The meal we had, at a surprisingly reasonable price, lived up to the expectations we had after our hosts told us what a good restaurant L'Odalisque is and after we saw its display of awards.
