An Executive Chef's review
UPDATE 1/3/2033
Absolutely on point. Had a amazing conversation with the executive chef who has trained in Japan and in various cities restaurants and hotels
if you're looking for an authentic flavor of Japan this is really the only place in queretaro at this time
Even the ramen bases and tare are made in house to authentic techniques
All the details are taken into account which makes the difference between a good dish and an incredible dish
Having lived, studied the culinary arts, and worked in Japan, Taiwan, Hong Kong, and inland China, I was pleasantly surprised at the authentic flavors SUM had to offer.
THIS IS NOT A CHIPOTLE MAYONNAISE / GRILLED SERRANO CHILI PEPPER establishment, this is a Japanese restaurant.
So don't come here asking for such nonsense...!
The chutoro Maki is an absolute delight, transporting me back to Tokyo Japan, Toritsudaigaku...
I ordered a verity of dishes from the Pad Thai, which is not Japanese but still well prepared, as well as the Okonomiyaki, various nigiri, abalone, yellow tail, uni, ikura, mackerel, tako, chutoro don, mentaiko udon, Takoyaki and Sapporo beer, all professionally prepared with the correct flavors, a rarity in Queretaro.
The owners were friendly and very attentive. The wait staff were also very attentive and fast, and friendly.
A clean spacious environment, with good lighting not too bright. Also a great place to bring friends for drinks.
Very reasonable prices for the quality of ingredients.
If you are looking for a good Japanese flavor at reasonable prices with kind and attentive staff and ownership, you should definitely give SUM a try.
I will be returning to sample more from their menu and provide an update.
