Food comes out relatively fast for the most part. If it is a part of the bento, it could take longer (beef teriyaki took super long last time) There is not that much difference with in person and takeout for chirashi combo...which is how it should be. The quality control here is fantastic regardless of eating in person or doing a takeout. Great quality fish, thick cuts, lots of rice...most people probably don't finish the rice. For in person, they do yelp wait list in person. (I don't think you can do it on the app for this spot). Biggest difficulty is parking. During peak hours, spots are small and tough. You may need to park farther out and walk over.

The display wall has a lot of options of sake, However all of them are just for display only, Their mini office or storage room have too much in stock so I can actually see all those take-out containers in boxes up all the way to their ceiling, that makes the restaurant looks unprofessional and not tidy. If I am paying over $90/person for an OMAKASE, I will expect the dinning environment should not see their storage stuff up to their ceiling. By the way, you really need to "de-bone" for the salmon soup, it's not a pleasant experience if I have to de-bone myself when I am paying $90 on sushi restaurant and also tips for dinning in. Fish bones are actually make me loosing appetise, or just give it up. I will be back for sure, but it will take a while for my next visit.

I love when the yolk is oozing, as I mix it into the bowl as the broth gets creamy… What I regrettably didn’t like, was the soup broth. The tonkatsu was light, but plain. I resisted the urge to dunk salt in my bowl- for me, the whole purpose of a ramen bowl is the broth. The noodles are just a vessel for the broth. The toppings exist to be coated in broth. It is everything. It was so plain, the Ichiran box ramen would laugh. I was relieved I didn’t get the thick noodles, because thick noodles especially need something that stands out to coat it. When I tried the garlic broth, unfortunately it just didn’t taste good. Don’t get me wrong- I love garlic. I am fond of throwing at least a minimum of a garlic head in my cooking. I was expecting the hallmark flavors; mellow, buttery, sweet, and nutty… it tasted sad. I felt bad because I took my partner’s ramen because I would rather eat something warm and tasteless than taste that form of garlic. Black garlic is a tricky flavor though, so I understand. Soup aside, what I observed at the other tables their karaage and other side dishes look crispy and generous. My impression from the fries I got are they good at frying things, and maybe I’ll try the tonkatsu instead next time. SERVICE WISE: They are a team of a bunch of hard working people, and I will commend them for that. I truly want this business to thrive and succeed because of how hard they work, which is why I am so honest in this review. The servers welcomed us in, and they let us know an estimate time- +1 point. They took our orders for the food so it was a seamless transition from outside to the table- +1 point. They had a perfect balance of checking in and leaving us alone- +1 point. This is a perfect area, in terms of their strengths and weaknesses. INTERIOR: The interior of the ramen shop is a lot smaller than I expected- in the restaurant there is a small island where they wait in the middle, and then around 6 or so tables that seat 4-6 individuals. It fills up fast, so if you are prepared to eat this ramen I recommend you are prepared to wait, or maybe stick to ordering to go if you are thinking of ambience. Unfortunately it is so small, you are bumping elbows with the tables next to you. It also will not be pleasant experience if you are seated next to a noisy table, where kids are screaming and banging tableware… I was so glad I was wearing 3 layers because when people enter and exit, the heat leaks out and you are shivering with your soup.
