A small artisan organic wine producer based in the town of Valdepanas. Aitor the guide did an excellent job in explaining in English the full production process including the maturation process that takes place underground in a cellar hacked out a few centuries ago that houses ancient clay vessels, oak barrels and more. All their wines are natural with no added co2 or sulphates with timing based around the lunar calendar. The tour ended in tasting 5 wines with 3 small tapas. Best to contact the winery in advance to agree a time although I turned up early afternoon unannounced. A highly recommended 90 minute fun experience especially if you are not too familiar with the significance of grape colours, skins, vessel types and tasting.
