(Originale) The food was pretty incredible. The menu is seasonal and items rotate off so it seems pointless to review individual dishes but all the sauces were amazing and proteins cooked perfectly. The trout I had really stood out with an awesome crispy skin. I liked some dishes more than others but overall didn't leave hungry and was satisfied. I was solo at the counter and had a view of the kitchen which was great. I could tell they tried pacing my courses along with some other two and four tops. This did create an awkward amount of time I had between courses as I was often finished well ahead of the other tables. Awkwardly, a couple arrived and sat next to me after I had begun and ended up finishing the entire tasting menu before me. So it was probably a one off that mine was extra spaced out. It was over 2hrs for a solo experience which isn't outrageous but definitely didn't need to be that long. The counter was a fun experience but the stools weren't very comfy for two hours and it was hot and loud. You could have a convo but when the server presented the dishes I had to really turn my ear towards them, break eye contact, and listen in. And I don't normally have hearing problems. That all being said, the highlight was the food which it should be. You can tell the technique and flavors are there. I'd like to come back to try another seasonal menu.

In many ways I felt similar to an experience of eating over a friend's house. The staff was great. The food was absolutely delicious as well, but our entire dining party did leave hungry. We did need to stop on our way home to get a snack. That said, the deserts in particular were wonderful. They had great contrasting textures and strong flavors. The other thing worth mentioning is that the place is set up as though it were someone's house. At one point the kitchen started smoking and there was a struggle to keep the door open to air out some of the smoke. It was very likely a unique situation, but that combined with the music did unfortunately sour some of the otherwise great experience. We sat at the chef's counter, which meant we not only got to watch everything happening in the kitchen but were even treated to a special dish reserved just for our seats. Every dish was delicious but some of the standouts were the Dungeness crab and pineapple pickle appetizers, farm beets with fennel and yogurt, grilled kingfish with artichoke and mussel emulsion, scallop with smoked trout roe, and 32 day dry aged rib chop. Everything was perfectly cooked but the fish, scallop and rib chop were really something else. We normally won't order any type of steak in the U.S. because we spend a lot of time in the Basque Country and nothing beats their Txuleta steak (pronounce "chuleta"). However, this is a set menu so we had no choice and this may end up being the best U.S. beef dish we've ever had, so kudos to the chef who was handling the grill. (She also was cooking the scallops, which were amazing too.) Along with the meal, we had a non-alc sparkling chard and an excellent locally produced lager beer, which went well with everything. (This is usually true of lagers but not IPAs, so keep that in mind when ordering beer to go along with food.) Next time we'll go with the very affordable wine pairing because we would love to see how it goes with the food, but were taking it easy on the alcohol that night. The fries were not hot and was fried very hard. The cheese on top was a little over powering. My cousin ordered the strawberry margaritas (she said it was good) and the fish and chips. She said the fish tasted okay and that the fish crust was not crunchy enough and kind of soggy. She chose to take the remainder home to put in air fryer just a little longer. Spent $119 (which is not bad, if the food was great/good) I only ate one crab cake, a couple of fries and a couple of spoons of the mac and shrooms.
