I arrived a little late for opening time at 10:45, and the counter was full, with a line of about six people already.
Peeking inside, I found 18 counter seats and the lively energy you'd expect from a long-established restaurant.♪
After a 30-minute wait, I finally stepped through the noren curtain to find the chef skillfully preparing ramen and fried wontons in the kitchen, while the staff worked brilliantly together. The atmosphere of this thriving restaurant gets my heart racing!
This restaurant's signature dish is "Tanmen."
A perfectly refined dish with clear soup, white straight noodles, and only chopped onions.

そんな中、宿泊先の藤沢から近場で「平塚のソウルフード」の文字を発見❗️
写真を見た瞬間、これだ❗️と心を撃ち抜かれました。
澄み切ったスープに真っ白な麺、刻み玉ねぎ――その潔いよいほどのシンプルさに、もう釘付けです。
開店時間の10:45を目指して到着すると、少し出遅れて中のカウンターは満席で既に6人ほどの行列。
店内を覗くとカウンター18席、老舗らしい活気が溢れています♪
待つこと30分、いよいよ暖簾をくぐると、厨房では大将がラーメンや焼きワンタンを手際よく作り、店員さんたちも見事な連携プレー。
繁盛店の空気に胸が高鳴ります♪

透き通るスープに白いストレート麺、刻み玉ねぎだけという極限まで研ぎ澄まされた構成。
