Then we tried 2 vegan versions of Ecuadorian classics. The first is basically a potato soup with tofu, sweet peppers, avocado, and potato chips. The other is a green plantain mash with mushrooms and avocado. The plantain dish was served with a quart of herbal tea. Finally… chocolate cake! The cake was served in a chocolate soup.
