Ramen Shingen's Minami 6 jo branch is a popular traditional Japanese restaurant in Sapporo known for its rich and flavorful ramen, particularly the local favorite, Sapporo miso ramen. The L-shaped counter can only accommodate a limited number of people at a time, leading to frequent lines outside.
One of the best ramen I’ve tasted. Broth is thick and generous portion of char siu. Queue is long. I was there 20min before opening and the queue is already snaking. Must have time and the patience to eat here.

This easily the best Ramen we ever had. Their shio Ramen that my wife ordered is very delicious. Better than their miso ramen. BIG Minus point is the waiting time. We started queue at 10.00 pm and we sit down at around 00.50 AM. Almost 3 hours queue 🥲. At first we only saw about 20 people queue and we think : yeah maybe only 1 to 1,5 hour queue. But what surprised us when we right in front the door. Suddenly some people come out from house next to the ramen shop and go in. And later we were brought to that house. And what we found ? About 30-40 more people inside are making a line to queue 😑. Man if we know the line this long we will walk away and find other ramen shop. side notes while queuing we didn't hear anyone speak other than Japanese. seems almost all people that queueing that night are locals. there is some fun things when the staff come to us and give us the menu so he can collect order first. my wife asked for the english language menu. he look at our east asian face and show us Japanese menu and we told him again : "English menu please , we can't speak Japanese " (while smiling). and finally he gave us the English menu 😁 I think he kinda surprised to find foreigners queueing at late night ? 😁

Great ramen, but I wouldn't say it's the best! Was it worth the wait (which was 1 hr for us), maybe not. However, it was delicious regardless. The ramen came in these massive bowls which were bigger than my face. The pork chunks, however, were super tender and flavorful. The broth also wasn't too salty. The service was amazing though! A young male waiter made sure to double check our order since we didn't speak Japanese, but he got everything correct and was super patient with us, despite the long line. Overall, the experience was great, but I'm sure there would be better ramen places elsewhere.

I waited 45 minutes. It was delicious and very affordable. If you don't mind waiting a bit, go there. Is it worth it? I think yes. Only downside it's kinda stressful. You are being watched by at least a couple of ppl while you eat. It felt like I have to eat quickly, which you absolutely don't have to but the pressure is real. Food is great tho.

Don’t know why line up from open til closed , let’s have a try ! Wow The first Hokkaido raman this travel, the Raman soup is delicious, but highly recommend the fried rice, because it is rarely to have this taste in another place in Japan. You won’t regretted if you missed the dumpling “ Gyoza”☺️

The soba itself was a surprise standout. I usually don’t enjoy soba because it can be grainy, but this place nails the texture—tender, chewy, and satisfying. We tried both the thick and thin noodles, but the difference was minimal. Highly recommend the Original Shrimp Miso and Original Shrimp Shio. If you’re into deep, umami-rich broths and quality noodles, this spot’s a must.

A nice ramen restaurant with a unique shrimp (ebi) ramen. There are three kinds of shrimp ramen: salt, miso, and soy sauce. When I visited, most of the customers chose the miso taste. Also, they have three kinds of noodle soup and two kinds of noodles, so that you can customize your ramen. When I arrived at the restaurant, there was a long line of people waiting, and it took around 15-20 minutes to get to the table and get your noodles. The miso ramen with the original soup (shrimp-only flavour) is unique, tasty, and rich in flavour. The staff can speak English and try their best to help you with your order. The menu is also English-friendly.

I did visit here around 2pm but lots of people ready. There wew about 10 inside guests and 3 teams were out side in a line. I could look a lot of sign boards which may were made by famous people. It means it has run for a long time. And employee will ask you and help to order inside. I ordered miso and thicker noodle along her recommend. For a beer I ordered a gyoja, but I think don't need to do that. Ramen alone is enough. It taste a little bit special and offer you very kind service. If you haven't visit here yet? recommend you, but I wouldn't visit here two times. Because I am a tourist has a lot of restaurants. From south korea.

I have come with my family on the Saturday . The staff is great to guide how to order , but freezing weather between the queuing is quite get me a cold . About the Ramen is vey delicious for me superb for shrimp soup ( I order moderate shio soup) but my wife she said it quite salty , but overall is great one to visit. I went on Friday 4pm and no waiting time. Only counter seats, about 20 plus. Service was helpful and friendly with English menu. I ordered the rich broth and thin noodles, it was pure umami, but note that the prawn is in the soup base, not as a piece of prawn. The gyoza was ok. A standalone building with parking at front. The location is a neighbourhood area and non touristy. Highly recommended to make a special trip to eat this.

Well, the ramen tasted shrimpy, and the soup base was very rich, just as described on their menu. But I guess it’s just not my thing, too salty for me. Service was organized. When we walked in, all seats were taken. So they asked us to wait in the waiting bench, and took our order while waiting. As soon as we were seated, the dishes were served. Oh one more thing that I like about this place, parking is super easy! They have their own parking lot.

Brilliant and unique food. I've been many ramen places before but this experience was first time for SHRIMP ramen. It is super SHRIMPy. Recommend Shio-ebi original (not soy, not miso, without adding extra donkotsu broth). Gyoza was normal. I will definitely visit this place again to figure out if thinner noodles could be better fit with the broth. Important: Go to the restaurant at 10 am or maybe 10:30, at least on weekends. Even with the thunderstorm, I waited one and half hours from 11 am.

Menya Saimi is a cozy restaurant known for its flavorful ramen dishes made with pork bone broth and various seasonings like miso, soy sauce, and salt. The local crowd's enthusiastic patronage indicates the restaurant's popularity. Their signature Saimi ramen, a rich miso-based dish with grated ginger, has gained such acclaim that it's even available as an instant cup ramen.
Unintentionally got to the restaurant 30 minutes before opening for dinner service. There was no queue. As it got closer to opening, the queue got longer. We were one of the first to get served. We ordered the spicy miso and the normal miso ramen. The stock was very flavourful. It had like a charred smokiness, the miso was not overpowering, and the noodles had great texture. The ginger added a freshness. It was a really good bowl of noodles, especially on a snowy winter night. It was a perfect start to my food adventure in Japan.

Saimi is one of the most well-known ramen shops in Hokkaido, and I came because it was the highest ranking ramen restaurant in Hokkaido (and 2nd best ramen restaurant in Japan) on the Ramen Database. I was pleasantly surprised to find only a short queue when I visited on a Friday evening at 6:30pm. We were seated within 10 minutes. Known to have inherited the Sumire lineage, Saimi’s miso ramen is a slightly milder and perhaps a more refreshing interpretation of the classic Hokkaido miso ramen. It was a lighter take on Miso ramen, and the broth felt refreshing. The broth had a balanced depth of flavor, as it wasn’t too sweet, not was it too salty. I found the ginger to be a nice complement to the broth, mixing the ginger with the broth brought out another layer of flavour to the dish. The noodles were perfectly cooked with just the right firmness and bouncing as. While I did finish every last drop of the soup, I couldn’t help but feel that my bowl of ramen might not have captured the full “legendary” essence that many associate with Saimi. That said, it was a satisfying, well-executed bowl that’s worth trying if you are in the Sapporo, and are curious about “Hokkaido’s number 1 ramen shop!”

Michelin Bid Gourmand Sapporo Ramen Shop It is 15 minutes drive the Stellar Place Sapporo so the distance is manageable. The Ramen is good but I guess I have put my expectation with the Bid Gourmand Label so the expectation bar is higher. For me, the ramen is good but I am not sure why it recieved the Bid Gourmand award.

Almost there. This joint is one of the most famous in Sapporo. When we arrived on a Friday afternoon, there is already a queue that continues even after we finished. The miso ramen is springy, fresh but there is only one cha siew even if you order large. The Miso taste is a little different that the typical ones in other stores. Not as strong probably for a reason. Small eating area thus the queue but people eat fast here. Free parking onsite.

Saimi is one of the most famous ramen shops in Hokkaido yet surprisingly the queue was short when I visited it on a Sunday evening (at around 3pm). I waited for around 10 mins before I got my seat in the shop. It is common knowledge that Saimi has inherited the Sumire lineage; and I think the miso ramen at Saimi offers a slightly milder and more refreshing take on the famous miso ramen, hence perhaps its popularity. Really interesting and delicious ramen. I tried the miso ramen which is different to other ones I've had before. Quite fragrant, and somehow rich and light at the same time. No English menu, so just try the miso or spicy miso, they are the best. A very local type place, but they are foreigner friendly. Highly recommended.

Came in not the hugest fan of Miso ramen but this place has changed my mind. We got there just as the shop opened but still waited in line for about 40 minutes as there were about 20 people ahead of us. A staff member comes around the line asking what you are planning to order and how many people in your party (do your Google translate ahead of time and figure out what you want). Prior to coming here, I read reviews that the ramen was too sweet or salty, I personally thought it was just right. The added ginger in the soup was a nicely added touch + the stir-fry bean sprouts were still crunchy. The texture of the noodles were cooked perfectly. I finished every last drop of soup in my bowl. Best miso ramen of my life. If you are in Sapporo, strongly recommended as long as you get there early.

Nestled in the heart of Sapporo, Aji no Sanpei is a charming and unpretentious eatery that has earned its reputation as the birthplace of miso ramen. If I were to only use one word to describe: harmony. Came here right before lunch hour to beat the queue. To me, it is the perfect miso ramen. All ingredients are in perfect harmony. The noodles taste and texture are just right to me. The smell of fresh bean sprouts wafting and the peppery taste of minced pork are just right to me. Love every bit of the noodles. Incredible service as well. Fast but very warm service.

Apparently the first miso ramen from 1953, when a drunk customer asked for ramen noodles in his miso soup. Tried miso ramen 1000円. It was tasty, large portion, with a historical taste. If you want to try the old style taste it is recommended.

This place is located on the 4th floor of a stationary store. It was a little odd to find a noodle shop inside a departmental store. The sitting place wasn’t a lot and had about 10-12 seats. The taste was ok but definitely not among the best ramen i had. Maybe I chose the wrong one. Anyway still a decent place for a nice hot bowl of noodles during a cold winter months in Sapporo.

Definitely worth the wait in line! Located on the 4th floor in a stationary store, you'll know you're in the right spot when you see the line of people. Don't worry it moves quickly - we waited 30-45 minutes. Staff were very friendly and gave us an English menu to order. Please order the miso ramen and shumai (dumplings). Do not miss out on the chili paste provided, it's delicious! Take caution as the ramen's temperature is hot! The portion size is huge, so make sure you come hungry!

Today I had miso ramen. Classic style from Sapporo. It keeps your body warm in cold weather. Located on the 4th floor of a stationery building in the center of Sapporo (Japanese souvenirs are also available). The piping hot soup and curly noodles made in a wok are the best. Keyaki is a well-known ramen bar situated at New Chitose Airport, celebrated for its specialty dish - the buttered corn ramen. This local favorite features thin noodles immersed in a flavorful miso-based soup made with three types of miso, an abundance of vegetables, and sesame. The highlight of this dish is the addition of fresh sweetcorn and a generous serving of butter that melts into the broth, creating a unique and delectable flavor.
Cosy ramen restaurant in Susukino. Stand in the designated space / queue outside the shop, go in when they call you. Select food order from the vending machine, pay, give your tickets and take your seat. We had the corn butter ramen with leeks, spicy miso ramen with leeks and gyoza. Everything was delicious, but the corn butter ramen was heavenly. The gyoza was one of the best we’ve had in Hokkaido/Japan. There was depth of flavor in the broth and it was velvety smooth. Fun fact - they also have their instant / cup ramen! The service is quick and the place is run by the chef and an old lady, who was extremely kind and offered me a hair tie to tie my hair also!

Chewy and al dente noodles texture which pair well with the broth. The butter corn miso broth has mild miso flavour coupled with the umami of broth. Con is that saltiness slightly stands out above the Unami of broth and the miso. Could be improved by stressing the later two with better balance. Overall a relatively good one. Waiting time is 30 minutes around midnight 00:00. Remember to buy ticket at vending machine inside the shop first before you queue.

Just discovered an authentic Sapporo ramen spot! 🍜 The shop is small with only about 10 seats, but the flavors are huge. The ramen here has a thicker noodle than the Hakata style, paired perfectly with a miso soup that’s just right—not too salty or oily. And the chashu pork? Thick cut, tender, and absolutely delicious! If you're a ramen lover, this place is a must-try!

This outlet caught my attention with its long queue a day earlier on the way to another restaurant nearby, Gotsubo Oyster Bar. When I passed it by again at about 10. 30pm, the queue was equally long. Told myself that I must try. I did the next day. Surprisingly, only a couple ahead of me. It was almost 9pm. It soon became clear why the queue was so long. It has only 8 seats total. Each took about 15-20 minutes to finish. It also has a sticker of "Japan Best Ramen Awards". Order is made via a ticketing machine. A simple menu with only 6 types of ramen. I like the pork broth. I took the cheapest miso ramen at ¥1000 which is a bit spicy. Just enough to give the broth that great flavour. Overall, it has a lot of cabbage. Ramen is springy. Very different from the typical miso ramen. Worth a try if the queue isnt too long.

The line-up during dinnertime is quite long. They only have around 8-10 seats in total inside. You first have to place an order with the machine inside before lining up. There is some English on the machine buttons so foreigners can order with ease. I ordered the butter corn ramen, their number 1 ramen. I added a piece of chashiu for only ¥150. The portion for the regular size was still pretty big! They have 2 different spoons, with a metal one having holes in it so you can easily eat smaller foods without having to drink soup. The ramen was really tasty! Butter corn ramen is a highly recommended specialty in Sapporo, and this one does not dissapoint. Despite having butter and oils from the soup broth, it didn't feel too heavy. The other toppings were great as well. It hit the spot very nicely during a cold winter night. It was a bit salty for my taste, so I couldn't finish drinking the soup. The chashiu pork was a very chick cut. It did have a slight cured taste, similar to ham. It was tender, but more that it just broke apart, kind of like if you pressure cooked some honey ham. Definitely different texture from regular chashiu. I'd give the ham a 4/5 stars. Service is quick, since it doesn't seat many. Parties up to 2 can be seated, but any more and they will ask if you can sit separately.

This was the most memorable meal of my Sapporo trip. By sheer coincidence, I happened to be staying a at hotel that was a 2-minute walk away from this ramen spot. After learning about this place online during my trip, I HAD to check it out. I came to the ramen shop at 08:00 and took a number for 11:30. There were only 2 of us there. One sign on the door says there will be numbers given out at 8:00, 9:00 and 10:00, the other says the owner isn't around so they will be serving a different menu (something they regularly do, I think). Came back around 11:30 and went straight down to find a staff to place my order at the machine. There were a few people queueing but not too crazy during my visit. The machine not accepting new banknotes is quite frustrating, but thankfully I had one note that worked, otherwise I'm not sure what other options I had because the Lawson right beside it refused to swap notes (I suppose they get that request way too often). I went with the ¥2600 option, which is kinda pricey but I didn't regret it one bit. Everything was just ... good. The broth was incredibly flavourful but light, the wonton skin was the best wonton skin I've ever had in my entire life (incredibly smooth, right amount of bite, right amount of flavour from the broth), the chashu and chicken was perfectly cooked (my guess would be sous vide is involved), just the most tender and appropriately flavoured meats. I'm not a huge fan of ramen, but I'm a huge fan of this place. If I ever come back to Sapporo, I would definitely make it a point to revisit. Hope I get to try the menu when the chef is around someday.

Absolutely one of Sapporo’s best bowls for years running. Super high-quality ingredients cooked perfectly. Been coming here since almost the beginning and it has remained one of my favorite bowls in all of Japan. Although they have sub-branches called Nippon Rin around Japan now, the quality here remains the best. The vibe has changed due to all of the tourists, but on the best days it’s quite zen and quiet in there as everyone is enjoying and focused on the bowl.

It was one of the best Ramen we had in our lives. If you like your ramen to be clear and light, this is the place you would look for. We made a reservation around a month ahead which cost a little extra. When we first arrived at the store, we were a bit confused with the queue in front of the store and thought we would need to queue to get in as we came a bit early. It turned out that the queue is for walk-ins. (Didn’t aware that we can actually walk-in when we reserved.) There was no staff at the front door which made it quite hard to know what exactly we need to do. If you have reserved, skip the line, go downstairs, and show your reservation to the staff. Once we showed our reservation, they let us order from the vending machine. They will let us in after ordering. We waited a bit inside before guided to our seats at the counter. We ordered different bowls of Ramen so we could also try both of their signature. I went with their flavorful Shoyu ramen and my bf went with their light Shio ramen. The aroma from both bowls was stunning. It’s strong and elevated the meal. They are very light Ramen that you can enjoy til very last slurp. We also ordered their special Shumai which also surprised us with the umami flavor and juicy. I would highly recommend that you make the reservation as these reservations normally (and sadly) cut the walk-in line. If you are certain about your day plan, don’t risk waiting 1-2 hours for a ramen.

Overall, a very present experience. Shumai was amazing, very meaty with a hint of ginger, pair that with a bit of spicy mustard sauce, you’re golden. I ordered a regular Shio(salt) ramen, the broth was very clean and super chicken-ny from the oil. Noodle was a bit of the softer side while the shashu was soft and super pink(in the best possible way). I would come back for more, for sure. I also order rice with grilled chicken, that my friend is the perfect pairing for ramen, switching between ramen soup and rice. Man, perfect! Located close to the Sapporo subway station, Japanese Ramen Noodle Lab Q is a must-visit for ramen lovers, especially if one is interested in finding top-notch non-miso ramen in Sapporo. Went there during lunch hour on a weekday and had to wait for around 25 minutes. Basically there are two main soups - soya based and Shio (salt) based. Both soups are attenuated by the aroma and vigor of the chicken base which give off a pleasant after-taste even hours after the meal. The amorous noodles also blend in with the soup well. When in doubt, order the Tokusei (特製) which gives you all the special toppings. Here they serve different types of charsiu which add to the complexity of the ramen; the wontons also match the ramen well. The atmosphere i side is almost like being in a sacred church - people expecting revelation and then being transported to heaven. but I ate the noodles and I was not transported to heaven. Not allowed to take photos inside except of your food. So not allowed to take a photo of your friends in case you capture another diner or the kitchen staff in the photo. Bizarre rule - never had that in Japan before.

It took quite a long time to queue at this restaurant — about 45 minutes at around 7:30 PM. The place is quite legendary, having been operating since 1964. Like most ramen shops, orders are made through a vending machine that offers several language options, including English, which is helpful for tourists. The restaurant is quite compact and the serving time is rather slow, which contributes to the long queue outside. Since the restaurant is famous for its miso ramen, we ordered the pork chashu miso ramen. As expected, the miso flavor in the broth is quite dominant and very oily. The noodles are thin, curly, and chewy. The toppings are pretty standard: pork chashu, dumplings, bamboo shoots, bean sprouts, and green onions.

Came 30mins before dinner hours on a Monday, was first in line. Shortly after, queue was forming rapidly even before opening. The ordering kisok is digital and available in English. Some items were sold out namely the chashu ramen despite being the first patron. We ordered the signature Miso ramen, the differentiating factor is the curly noodles which provide some sort of texture (reminding me of the noodles used in Jiro Ramen), and the single dumpling which was mainly made of skin, rather bewildering. Broth was decent, service impeccable. I recommend coming before opening hours to try it once. I wouldn't come back again due to the queue; the taste was one notch above average, somewhat remarkable.

A very traditional miso ramen that has set the standard for many ramen shops in the region. Tl;dr: Okay miso ramen, long queue, sold out of chashu 1 hour after opening. One of Sapporo's most well-known ramen restaurants, even for the locals. This is evident from the long queue every time we walk past. We arrived just before 6pm and there was a line of around 15 people in front of us. It was a fast moving line and we only had to wait for less than 20 mins. There was a vending machine to place your order, and they are available in english, and you can pay with your card. Unfortunately, albeit the restaurant being open only for 1 hour (they open at 5 pm), we found that they sold out of their chashu ramen. That's half of the menu gone. We decided to order the original miso ramen (extra portion shown on the picture) with an extra boiled egg and fresh spring onions on the side. This could be a preferential thing, but our miso broth was very salty and very oily. It was so salty that once we had finished our noodles, we couldn't enjoy slurping the rest of the broth. We wouldn't say there's complexity to the flavour of the broth. Noodles were cooked al dente, and boiled egg was nicely cooked with soft but not runny yolk. The one piece of chashu that came with the ramen tasted okay, on the dry side, and it was thin. When we went out, there was a massive line of around 30 people, and wondered if it's because it was Friday night. We decided to check if ramen alley had the same amount of interest, only to find that they're not as busy as Sumire. Maybe the locals do like the flavour of Sumire, but it was not a good balance of flavour for us.

Many people probably come to this restaurant based on its Google review rating. From the long line outside, it’s clear that most customers are tourists, as many were carrying luggage. The staff’s attitude was quite unfriendly. Ordering is done through a machine, but the actual menu offers options to adjust the richness of the broth and the firmness of the noodles. However, the staff didn’t ask for our preferences. The broth was too salty for me. My daughter said that the miso-based broth is a signature of Sapporo, but I believe other ramen shops should be just as good. Additionally, this restaurant is very difficult to find, especially for those who don’t understand Japanese and rely on Google Maps. Coming from the east exit of JR station, we couldn’t walk directly there. Instead, we had to go up to street level, find the subway entrance, and go back down. In my opinion, it’s not worth the time or a meal to try this ramen shop.

If you are a Muslim, you know it's hard to find Halal food or ramen in Sapporo. This restaurant is not exactly Halal, but they have vegetarian & vegan ramen options without the pork and alcohol. You can also choose the option that comes with a soy-based mock meat steak. The ramen I got was pretty good, not too heavy and not too salty. Came with a lot of corns, bean sprouts, and some other greens. The brown was pretty big too, so it was filling. The only downside I felt was that the space is really small, so if there are many people waiting, there could be a long line. I had to wait just around 10 minutes, so that was okay!

Their hours of operation for dinner is only a few hours, check accordingly. I ordered the number one seller. Base is Miso and you can get thicker soup if you’d like. Wife order the garlic ramen and stated no onions, but you know it, it came with onions. Hers tasted the same as my ramen. No difference to be honest. Yukikaze is a cozy ramen shop known for its flavorful noodle dishes and handmade gyoza dumplings. The menu features rich miso ramen with velvety soup made from white and red miso, pork bones, and chicken carcasses, as well as spicy miso ramen infused with star anise and Japanese pepper. For a lighter option, there's the chicken broth salt ramen.
Some of the best ramen in all of Sapporo. The broth is made to perfection and the gyozas are spot on. This is a local favorite and therefore as soon as it opens, the line can get pretty long. Overall, strongly recommend this authentically made ramen.

This was the best ramen during my trip based on the combination of the soup and the noodle. The other places were Ichiran Tokyo and Tsikahaga Sapporo. Both are big names and popular spots. I ordered the spicy miso ramen medium hot. The soup was thick, flavourful, coating the tongue and mouth. The noodle was medium size but has a bit chew, bouncy and rubbery. The line is always long, even past midnight. But it moves relatively quick. There are 10 seats inside.

Yukikaze is a classic ramen shop with limited seats of 12 - 15 at max capacity, and offers miso-based ramen. The ramen is totally packed with flavour, with the soup boiling with love for 10 hours and you can be rest assured the test and texture are the best. It feels like a loving, big hug when you drink the soup and adding on the fatty, soft pork belly even on a hot summer day it was such a comforting lunch. Gyoza goes well too, juicy on its own but add a drip of soy sauce, vinegar and chilli oil with a small sip of the soup, 100% satisfaction. Side note, they do have a lighter chicken broth choice as well and that too was tasteful without that heavy umami that some may find too overpowering. Gochizosama deshita!

Incredibly delicious. I got the spicy miso ramen. They have 3 spice levels: normal, medium, extra. I got medium. It was quite spicy. I would have liked to try the normal so that I could taste more miso. The pepper flavor is quite prominent with the medium, but you definitely get a lot of depth from the miso too. The flavor reminded me of a really high-quality Sichuan hot pot broth. It was fragrant, layered, and deeply flavorful, yet somehow clean and almost refreshing. The heat pops and hits you up front, then gracefully backs off, letting the miso complexity shine through. It was everything I thought Kikanbo would be. Also, I went with someone who got the shio ramen and tried a bit. Great clean and strong chicken flavor. Excellent as well. The best spicy miso I've ever had. I would come back in a heartbeat. If you like spicy miso, you must try this place.

Good ol’ Yelp found us this must-try ramen shop in Sapporo, Yukikaze, which by the way, is the birthplace of miso ramen. It was awesome. RESERVATIONS: None. We waited about 30 minutes on a Friday night around 10p. Don’t let the line deter you because it moves quick. MENU: Ramen in 3 broths (miso, spicy miso & chicken bone), gyoza and beer. FOOD: Rich Miso Ramen - $6.79 I’ve had a hatred to miso ramen for years. After eating here, I’ve come to learn that the recipes I’ve had were simply subpar. I also didn’t like how the noodles married to the broth. But here - here is a different story. Broth sip, wow. Well-balanced and savory. The noodles were served overly al dente but held up well till the end in the searing hot broth. Thin and moist, the chashu was good. I’m not positive what the shredded vegetable atop was; maybe radish? My only gripe is the tamago was a tad overcooked but still retained some gooeyness. Handmade Gyoza - $3.40 (6 pcs.) Nice sear with moist filling. We had 2 pieces leftover but it seemed like the kind of place or culture where you don’t take it with you, so we left it, sadly. SERVICE: The host/server/cashier brings menus to folks in line and comes back in a few to take your order. Once your seat opens up, you’re escorted in and your food is served in a minute or so, piping hot. The team of four churned out customers and food like well-oiled machines. When you’re done, present your pretty face at the cashier to pay, cash only. OVERALL: Utterly, highly recommended.

Ganso Ramen Yokocho in Sapporo is a historic alley dating back to the 1950s, renowned for its cluster of small ramen restaurants. So many selection of Ramen store and mostly open for dinner. I am just choosing the one that less queuing and good google rate. Would recommend miso ramen with butter since it’s hokkaido specialty

My family and I as foreign tourists visited and walked through this famous Ramen "alley" in downtown Sapporo. We were highly impressed by the many Ramen shops that were located in the "alley" and we had a nice Sapporo Ramen dinner at one of the shops therein.

One of my best ramen exploring experiences. This place has lots of different ramen restaurants within a small alley. Do not let the size of the restaurant make you walk away; each restaurant has its own vibe, and the cooks are very kind to visitors. I loved the buttery flavour of the miso ramen prepared at this place, plus the soft corn they typically put in the ramen. Try the clam miso ramen, delicious.

After almost 24 hours of flying and travelling, we were ready for a treat. Their miso ramen is so delicious. The broth was hearty and savory, full of miso goodness, and what I hoped for in a city renowned for miso ramen. The noodles has the right amount of chew. Ajitsuke tamago was cooked perfectly. We also tried the spicy version which was equally delicious. The owner/chef was incredibly nice. We arrived to order near closing time but he still let us eat. We chatted for a bit after everyone left. He's a hard worker but loves talking to the people who enjoy his food. Would highly recommend and would come again.

I remember being on my flight back from Vietnam in the spring, watching a Anthony Bourdain No Reservations episode in Sapporo on the 10 inch TV on the back of a headrest. “Damn I would love to go there,” I said to myself as he slurped Sapporo style ramen while describing how it’s served with corn and butter. That summer I met with a friend who detailed how he was playing basketball in Sapporo next year. The connection clicked for me, and he said to come visit anytime. “Don’t play with me I’m king pull up…” I responded. Fast forward to winter and I found myself in the famous Ramen Alley in Sapporo, slurping a bowl of Sapporo style ramen with corn and butter. It’s funny how life works like that sometimes. I went to a couple different spots here out of 17 different ramen shops, but my favorite was Teshikaga Ramen. It was the best bowl of ramen I’ve ever had, and in the purest ramen weather. Cold weather where you can barely feel your nose while the snow falls lightly outside. It was spiritual. Ramen Sora is a cozy stop with only 9 counter seats, serving up traditional Sapporo-style ramen. With branches across Hokkaido, Southeast Asia, and Las Vegas, this popular spot is just a short walk from Susukino Station and stays open until the early hours of the morning. The attention to detail in both ingredients and cooking process results in richly flavored ramen featuring Hokkaido pork and garlic-infused miso.
Yum! We ate around 3pm and was the best time to go, we didn’t have to wait at all. Watched the dude hand make noodles, the pork was melt in mouth, the shabbiness of the store gave a real authenticity. Bit warm in there even on a nice 25 degree day so I can’t imagine 30+ degrees.

2023.11 revisit same ramen same so refresh. 2018.11 I tried the misu ramen.... A special one. Soup taste more than pork soup base... They also heat up the soup few bowls at a time. To keep temp hot. It is not the thick type...wow the miso smell and flavor is different than other....Meat is not sauce, but taste good. Noodle can feel the egg taste in there. Super small place. 2 men control everything. Worth to try.... Always has line. Better than a lot of famous brand

Came at 11pm and waited for about 15mins with 4 pax in front of me. Not too bad but it’s really cold during winter time. Thought this is a tourist trap but this place serves real good ramen. Just wait a bit and the staff you come out to ask you how many people when it’s your turn and usher you in. Really small joint but very reasonable pricing. Miso Ramen is 800 and spicy at 900. The don is about 100-300. The taste is good too. Location: opposite Ippudo 5 stars for pricing, ramen about 4 stars.

After waiting about 10 minutes, my wife and I got a chance to eat at Ramen Sora. Although it was hot and there are only about 9 seats, we both said this was the best ramen we have ever had. You can tell that only the locals eat here (we were the only tourists) and that it is a hidden gem. For about 1000 yen, you can get a bowl of cha sue ramen with nori, ginger, scallion and sesame seeds. We didn't think the broth was salty at all, unlike other ramen places. We also loved that the ramen wasn't too soft or too hard. My wife got the miso Ramen and she fell in love. We don't want this place to get too touristy, but we had to leave a positive review!

I was in Sapporo in 2014 and tried more than a few ramen places: at the train station, around the university, and a couple at the famed (touristy) "Ramen Alley". This place was just a narrow little ramen counter, with the front open to the elements while rain beat down outside. I was a bit exhausted from travel and ravenous, and this place... well, I was drawn to the fact that it just seemed from the outside to be the most humble place on the street and the guy behind the counter was welcoming. I went with the miso ramen because it was my first time in Sapporo and that seemed like the thing. It came piping hot and fast with a lovely, thick, fatty piece of chashu that just melted in the mouth. I've had fancier ramen since, and maybe ones that had better aspects, but this just hit the fundamentals and at a great value. And I still think about that chashu when I have ramen on my side of the ocean.

Isono Kazuo "Sapporo Black" Ramen is a cozy spot in central Sapporo, popular among locals and tourists alike. Open until 5 a.m., it's perfect for night owls. Despite its small size and limited seating, the turnover is quick.
Tiny shop, but the ramen is great! There are 7 seats at a time, so expect to wait a little. It opens around 2200, and we got there a little past 2100, and the queues were already going up the first staircase. Total wait time was about 1.5 hours, so don't expect food the moment you arrive. Also expect to be waiting in a tiny corridor/staircase. It'll be worth it, but it could get uncomfortable. You don't need to order extras, as the main ramen already includes everything, in case you're not sure

Its one of my unique ramen experience in Japan. The broth was flavorful, and the noodles were al dente and chewy. It was a refreshing break from the usual tonkotsu broth or butter-style ramen. Small ramen shop operated by single chef. Ordered the Sapporo Black which what everyone else is getting. Interesting point is that the chef will toss the ingrediets on a wok to get the charred aroma (wok hei) and then he will add the shoyu tare and the soup which similar process to miso ramen. I love the ramen in this place and i also add a little vinegar when i almost finish to experience different kind of soup taste. Wait time is about 45 minutes when i came at midnight. Plus point he has instant ramen to purchase at store for souvenirs.

Great ramen shop that opens till late at night. Operated by one chef only but he is super efficient and friendly. The shop is most famous for its “Sapporo Black” ramen- thick dark soya sauce base which goes well with the thick noodles The only downside is the long waiting time (due to the small capacity of the shop), and I waited for around 45 minutes in the stuffy and narrow staircase and corridor outside the shop. Ramen Sapporo Akahoshi is a must-visit spot for ramen enthusiasts in Sapporo, Japan. Located in Ramen Yokocho, a charming narrow alleyway with numerous small ramen shops, this place offers an authentic and traditional Hokkaido dining experience. The alley features at least a dozen cozy restaurants with only a few seats in each, creating an intimate and bustling atmosphere.
All of the staff members and the proprietor were quite polite. I appreciate the staff's assistance in returning my money even though I made the mistake of placing two orders using the same machine. The meal was excellent and reasonably priced. Seaweed and delicious soup combine to create a delightful combination. I will definitely be back. Strongly recommended.

Cosy 8 seater ramen shop serving up a great bowl of ramen. You could walk past it without even noticing! Personally I love the shio ramen, one of the must haves in Hokkaido (along with miso and shoyu) and topped up my order with more seaweed and of course an egg. It’s all in the broth - flavorful and layered - first sip hit you with an intense savory flavor, followed by a subtle light after taste (unlike the richer tonkatsu), noodles are al dente and char siew tender. The nori by then has soaked up the broth and additive to the experience. Throw in a dash of pepper after and you have an extra kick in the spice. Really can’t ask for more in a bowl of ramen - simple, filling and leaves you wondering if you should come back for more.

Like many places, looks can be deceiving, and judging it by the outside alone means you'll miss out on good ramen. I got the ¥1000 miso ramen set with an ajitsuke egg and a slice of chashu. Overall great broth and noodles, chashu was excellent for a less fatty cut, and the egg was delicious. I only wish it came with one extra slice of pork, primarily because you can get more for the same price at other restaurants. As a side-note, I went on a Sunday, where on Maps it says it's closed. An amendment to listed business times may be necessary. Overall 4.5/5

Ramen Gantetsu Sapporo Station West is a hidden gem located under the elevated passage west from JR Sapporo Station. Despite its inconspicuous location, it has garnered a diverse following, from CEOs to students. The miso ramen and fried rice are highly recommended, with consistent quality over the years. The rich and thick miso soup is particularly noteworthy.

I went to this restaurant with my colleagues for lunch and the place was full of people. We had to wait for around 5 mins to get a seat. Loved both visits to Ramen Gantetsu during my wife and I's visit to Sapporo. The first time I got the spicy miso ramen with Gyoza and the second time I got the regular miso ramen. All the food we ordered was delicious , even if I am not a fan of bamboo. Ordering food at the ticket machine was easy and when we ran out of water they brought us more without us having to ask. 10/10, would recommend.

Great ramen! A little difficult to find but when you do find it, all that effort is worth it! Springy noodles with flavorful soup, topped with melt in your mouth charsiu! Only complaint is that the egg isn't the usual "hanjuku" (soft boiled) egg but instead was quite cooked. Still good though! Ordered the gyoza and felt a little disappointed. Flavour is good but the bottom wasn't crispy.

I had the miso ramen with fried rice set & gyozai with beer set. Price wise seems reasonable, comparable with many Japanese ramen establishment. The ramen was fine, the base was rather tasty for me. Gyozai was similar to some supermarket type, so wasn't that tasty. Fried rice was surprisingly nice, but some might find ingredients lacking (not enough egg pr meat etc). As the store is under the railway, atmosphere might not be as conducive for fine dining, but I think it's alright for a ramen shop.

As a foreigner I felt better when I saw locals needing help with the menu at the ordering machine. The only serve 4 types of ramen but descriptions are not easy to understand except for miso. Shio and soy flavors are not intuitive. Staff are helpful with English menu but again the descriptions don’t match easily with the machine. The star is the chicken - 350yen 2 huge pieces of thigh meat (likely the whole thigh) We ended up with miso regular and miso spicy. I would have preferred to try the shio (salt) but felt pressured to order fast with people behind.

My husband visited this place 5 years ago and always told me it was the best ramen he’d ever had. This time, he brought me here — and he was right! We went around 6:30 pm for dinner and waited about 1.5 hours in line since the restaurant is very small (only about 10 seats inside). But honestly, it was absolutely worth the wait. The broth is incredibly rich and flavorful, and the noodles are on another level. Hands down the best ramen I’ve ever had too. The chef and staff were also super friendly, which made the experience even better. Definitely worth coming back again — and definitely recommend!

Accidentally discovered this ramen alley with this top rated ramen shop on family trip. My dad and I arrived here before dinner time and holy...it has a line already. Out of curiosity, dad went ahead to see the inside of the shop from the windows, total 9 seats in there and its crowded just like any local authentic Japanese restaurant and yet people are lining up, it must be good. After 1.5 hr wait, we finally sat down (surprised my nearly 80 year old dad was willing to wait). Both of us ordered different kind of ramen so we sure enjoyed and finished it without any drip in the bowl. I've eaten so many ramen from Kyushu to Sapporo, this is definitely the top 3 if not #1, its definitely worth the wait, if I'm not mistaken, they offer season menu here, so perhaps in winter time when you go, you can try something else rather than my post.

One of the best ramens in Japan!! We got the Miso Ramen and it was delicious- the noodles were just the right consistency, the flavour of the miso broth like no other, and the pork melted!! Oh and the eggs were delicious too! We also tried the Garlic Ramen which was definitely a more intense flavour but if you like Garlic then you will love it! Our first meal in Sapporo after a long day in transit. We couldn't have chosen a better spot! Sapporo Ramen Haruka always has a line outside and the place itself is very intimate. A proper ramen bar with its 10 or so seats surrounding their kitchen. It was almost 11 in the evening and we waited for around 30 minutes but it was worth the wait. Haruka Ramen is the real deal. A small shop with 9 person seating, there might well be an hour or more wait in line. But it’s totally worth it. Don’t worry about it being an hyped up tourist trap — it a genuine Sapporo institution and on the night we were there more than half were Japanese diners (not sure if they are from Sapporo or elsewhere). I had the simple miso ramen because I wanted to compare it to Ichiran Shinjuju’s offering. Haruja’s version is more flavorful, more robust, with thicker noodles. And it is better than ichiran’s! I saw the chef sauté bean sprouts before he adds them to the broth — many ramen joints would just throw in the sprouts without this additional sauté step. Despite the long queue the chef volunteered to take a pic for us as he knew we were trying to get a photo from an angle that he had access to. Great place even after factoring in the hour-long wait

This is a great Raman experience not to miss if you are in Sapporo. It’s a complex of about 8 ramen shops offering their own special recipes. Sapporo ramen is miso based unlike most other regions of japan so you should really give it a try. It’s not super easy to find. Good taste for authentic ramen, very much flavorful soup. Not recommended for large size since you will get queasy for eating too much. Only pork available as the meat. Theres around 10 seats and small space, you should be in queue for 5-10 mins if theres no seat available. The space pretty small, queued customer will waiting and stand behind you when you are eating, personally i dont like this. Staff are friendly but wont be able to communicate with you in English, but the order should be through the ticket machine without interacting with the staff except you have special request on your order (eg: removing the meat because you wanted halal/non pork version)

They have a strong aromatic flavor that pairs well with miso soup. The noodles have a delicious chewy texture and are medium-thick curly noodles. It was very tasty, especially the pork topping. It should be one of the best Sapporo's miso ramen.

Wolf Ramen! Google translate doesn’t work very well with the menu, but I think it basically comes down to 2 ramen options. It’s gingery egg miso ramen that’s kind of heavy, so for those who prefer lighter soups, it may be a bit tough to finish. I usually don’t like ginger, but I would say that there’s enough ginger to be noticeable, but not so much as to put me off. You can buy some merch, 2 portions of their noodles and soup in one box. It was ¥850 per box. Tissues were provided at every table and you could get some self served water with a pitcher at every table. There aren’t many seats so try to come earlier.

Came here for the course lunch and Eel dish. This restaurant has very much privacy and quiet separated room if you want to. There are simply two way to cook Eel in Japan. One is crispy and soft inside grilled eel which is Western Japanese ( Kyoto and Osaka ?) style, and the second one is softly steamed eel, which is maybe Tokyo style. Depends of which style you like, you might like here or not. Personally, I like the crispy and soft inside eel. All of the menu is very well prepared and beautiful also quite low carbo and less sugar and salt so very ideal for people who needs diet menu. This restaurant is located in middle of the most nicest living area of Sapporo. Which is bit posh. Also they are displaying some Japanese food dish on the first floor so you can buy it if you want :)

It's my mother birthday and I want something special on a trip to Japan. Booking reservation on Klook and we arrive a bit early, but they let us in no problem. Sankakuyama Goemon Ramen is a small, historic building that offers fantastic Shoyu Ramen with marvelous soup, chewy noodles, and char siu. In addition to the soy sauce ramen, they also serve salt-based and miso ramen in winter. Despite its unassuming appearance, Goemon Ramen surprises visitors with its delicious Chicken Salt Chashu Ramen and homemade noodles.
Me and my friend went here on our first and last day of our trip to Sapporo :) we both got the鶏塩チャーシューメン (chicken salt and pork slices ramen, ¥1150) and it was 10/10 first time we forgot to take pictures because we were hungry 😂 but we had both gotten the original. The next time we went, I got it without spring onions (which weren’t too overpowering but I just rather not have them) and the owners were more than happy to oblige :) They’ve also got an English menu if you need one! They have limited seating but that’s the norm of “hole-in-the-wall” places. The ramen is amazing :) The lady also recommended next time to try the しょうゆラーメン and I saw locals having it both times I went and they looked very happy :D Will definitely visit again next time fate brings me to Sapporo :)

I think this is a “traditional ramen” that you need experience as a tourist. The chicken soup base is really light but tasty. If you didn’t eat pork, you can ask “no chasiu”. They only have 4 options for ramen, and 4 options for rice with topping. And you need to try their “jakomeshi” its a rice with anchovy, it’s really good. Walk-in to Yamachan at susukino outlet. Whenever come to Japan, Yamachan is definetly one of the place that I will dine-in. Visited the famous Sapporo ramen alley around 11:30 on a Wednesday. A handful of restaurants open for lunch, but most had several diners inside already and I wasn’t sure if there was room. I walked by ICHIKURA and noticed their door was left open with the two ladies inside inviting people who walked by to come in. It was empty, and when I saw they served miso butter corn ramen (the reason I came to the ramen alley), I decided to give them a shot. I’m honestly surprised people were filling up the other stores but this one was empty. The butter perfectly melted into the miso soup and the corn was perfectly sweet. The charsiu wasn’t very aesthetic, but was still very tender and tasty. Noodles were on the firmer side but cooked well and had a nice chew. And the broth was amazing. I normally don’t drink the soup when I eat ramen but I had to for this one. Pricing was the same as other stores’ miso butter corn ramen as well. Very glad I stumbled upon this restaurant!

Recommended ramen place if youre looking around Ginsi Yokocho. We’ve tried 3 ramen places here. Best one is still the one at the end of the alley. Rhis is the second best. With the owner being the chef himself. I got rhe spicy ramen C. It was tasty. The pork was super delicious and meaty. I do not want pork to be fatty usually and theirs was the best so far.

We had the Spicy Miso Ramen and the Shoyu Roasted Beef Ramen with Dumplings. Compared to other Ramen places the broth is light but very tasty. Perfect chew and holds on to the rich broth well. The special traditional miso ramen uses a rich pork broth, which somehow manages an insanely layered and balanced symphony of flavours - deep umami, sweet bitterness and slight spiced. The rich miso ramen uses a white chicken stock and encapsulates the best of traditional Sapporo miso ramen. Clearer, sweeter profiles of aka miso I’m guessing, and slightly less greasy than the former, equally satisfying. Richer, thicker and greasier than I normally prefer, but so deeply layered and satisfying, I lapped up every drop of it (a rare occurrence with ramen) and savoured every calorie. 10/10 bowls that I’ll keep dreaming about till my next visit. Sapporo, being the birth place of miso ramen, surpassed my expectations.

This has to be one of the more memorable ramen shops that I have been to in a long time. The ramen chefs take their craft seriously and each bowl of ramen is meticulously prepared. The award winning seafood tonkotsu shoyu ramen was excellent. The Eiji Style Sapporo ramen is very different than the typical Sapporo style miso ramen with a hint of Japanese curry in the soup base. The tsuekemen is relatively more typical, but still well executed. Definitely a must visit ramen shop when in Sapporo. There is a car park close to the shop where parking is free for the first hour.

I’d seen Ame-wa-yasashiku in Ramen Walker magazine. I was attracted by the fried gobo (burdock root) in their pictures and was it looked like an interesting bowl. The soup of tori-paitan, which is to say, tonkotsu’s chicken cousin, but then they do something I’ve not seen before which is to have a dollop of scallop paste (yes, the shellfish) on top for you to mix in. It adds an interesting richness and depth of flavor. My partner was not as convinced as I, but you can ask for it on the side. My family and I had both Shio and Miso Tori Pai Tan and they were both delicious. What I thought was an excessive amount of garlic was actually scallop paste and it made the whole thing more flavourful. The burdock they top the bowl with is very nice; they put 2 regular ones and 1 spicy one. The spicy one was a bit too much for my little kids to handle so you gotta watch out for that.

Tried both with soup and soupless. The soup is rich with sesame taste which is nice. The flavour of sanshou (japanese spice similar to sichuan pepper) is a bit too strong for my liking for a medium level “numbness”. The soupless one I had also had ground black sesame hence the black noodles. The taste was nice although I found the noodles too soft. The shop recommends ordering a rice to finish all the sauce left for soupless noodles. I didn’t try but it sounds good.

Hard to find the entrance, but we managed to. Ordered white soup ramen and tsukemen (dipping ramen, they say). Took some time to get the food, but the food itself was awesome. My wife and I really enjoyed it. My wife is not a big fan of ramen, saying ramens are too salty, but even she said it’s really good.

Small little hole in a wall place down the “new ramen street”. We first walked to the famous ramen street but it was so packed with liens for every single restaurant we decided to walk around and eat somewhere else. We had to a wait a little bit inside the corridor before the waitress asked us to order on the self service machine (which also has english), and then continued to wait outside. When there was space we were able to sit down and our food was served shortly. The noodles were fantastic however the broth was a bit too fishy for my taste and the meat was a thin slice of salty pork with little fat.

The store is located in the subterranean hallway on the right of the FamilyMart. I went to eat there alone, and didn't have to wait at around 20:45. At 21:00 a line started forming outside. The ticket vending machine has a fully functioning English menu. I had the recommended Miso Ramen (900¥), and Gyōza (450¥/5pc). Both were very delicious. I espacially liked the Meatball with hints of Sechuan Pepper, and available Fish salt. The broth was very thick and rich in flavour, while still being subtle about all its different colours. Definitely worth a visit!

Favourite dry ramen in Japan. Noodles perfectly al dente with a nice soy sauce based sauce. Adding the chili oil and chili flakes make it even better. 880 yen per bowl, noodle portion is huge. Order at the vending machine and they will seat you quickly

It's past midnight from where i live and i still think about the time i went here for ramen. This for me trumps those other shops in the ramen alley that people queue up for. Maybe it's preference but oh my, i feel it is a sin if i go back to Sapporo and not eat here. I ordered the ramen in miso and fish broth soup. Soup tasted like eating smoked bbq pork but in ramen bowl. I remember just nodding my head in happiness and approval while eating this. I can't wait to one day go back and eat back at this restaurant. Hopefully they branch out to different parts of Japan too.

My first ramen in sapporo did not disappoint. Reasonably priced, the meat was so good and had a little charcoal after taste. The broth was rich but not heavy. I enjoyed a couple of Chinese braised dumplings as well. I probably prefer my noodles a little more cooked, but that's me. Recommended.

One of the best ramen experiences I’ve had in Sapporo! I arrived at Tokuichi Ramen around 9:30 AM and there were already about 15 people in line. Despite the queue, it moved quite quickly, and the wait was absolutely worth it. At the time of my visit, the menu featured shio ramen and liquid miso ramen, with prices starting from around ¥1,100—which I think is excellent value considering the quality. I ordered the shio ramen with chicken oil, while my partner had a seasonal special: abura soba with uni (¥3,000). Personally, I preferred the regular shio ramen. The broth was clear, aromatic, and deeply satisfying. The noodles were outstanding—firm and slightly crisp, reminiscent of soba texture. Toppings were also well-executed. The fermented bamboo shoots (menma) had a lovely hint of yuzu, and the sous-vide duck and chicken were both tender and flavorful. Tokuichi Ramen stands out from the typical Sapporo ramen shops. If you're looking for a refined, well-balanced bowl with top-quality ingredients, this place is a must-visit!

Very clean tasting chicken-based ramen, we finished up the soup to the last drop. It’s definitely different from tonkotsu / pork broth ramen where it’s less intense and oily, instead you have this refined & light chicken essence which gets deeper in flavour the more u drink it. The vegetables were also so good (not sure if it was leek or onion or bamboo shoots). Highly recommend the miso based ramen for a deeper umami taste. We went at 1:30pm on a Saturday and waited less than 10 minutes. Oh and be sure to check out the coffee stand next door IPPO IPPO - great coffee and their cream/raisin butter cookie sandwich was way superior to Rokkatei’s marusei cookies.

What felt like the middle of a random alley in what's supposed to be the less popular of the area's seafood market is a fantastic bowl of ramen. The space is quiet, clean, calm and yet still warm and inviting. The staff is very friendly and gracious. But the main attraction is really the star. Though they have a rotating seasonal special, I went with the shio/salt special which is the signature bowl and it was an almost perfect bowl of art. - The broth is very, very clean and is almost consomme like. Great chicken flavor, well seasoned but still delicate. - The noodles were firm, with just a bit of chew. I believe being wheat based, it has a touch of earthiness flavor that was appreciated - The chicken breast was succulent, tender but still had structural integrity while the duck chashu had a nice ratio of meat to fat and just the right amount of pleasant gaminess - The menma was mildly seasoned and had the right amount of toothsomeness giving the bowl the needed texture and the egg was well seasoned, jammy, and still warm - Though what might look like for show, the kombu foam and mushroom powder were the proverbial, needed cherry on top of seasoning as well as aroma This isn't your typical Sapporo miso ramen of the region. This is a particularly and painstakingly passion project from a chef that is bringing his French experience to create something wonderful. There times when things are elevated just for the sake of being different or to justify a higher price point. At Tokuichi, a harmonious balance was created where everything compliments each other and is a real treat. Hours are limited and there can be a queue but it is well worth the time. I hope to be able to return someday and try a seasonal offering.

We tried butter corn miso ramen and wontan soy sauce ramen, 5/5 taste but the shop doesn’t have boxes for personal belongings. Overall 4.5/5. Also they only accept cash so prepare it in advance

very first meal we had in our japan trip and it was pretty good. all the ramens we got were a little different from each other which is good but the broth was on the salty side. some pieces of the pork was a little on the chewy side but the portion size was good. would recommend getting any ramen here but maybe avoid the wonton ramen, five spice was too strong and threw the balance off.

Tried the spicy miso ramen and the iwanori noodles! A true indication of a good ramen is how they balance the saltiness and spicy notes in their base soup. And it was slightly abit salty but the spiciness was just right. Noodles were springy, beansprouts were crunchy. Char Siu was cooked just nice, enough bite but soft to chew. Tried the spicy miso ramen and scallop ramen. Very disappointing. Nothing comparable to Ajisai Hakodate ramen. The broth is really tasteless and generally the whole ramen dish was very very oily. They also did not strain the miso soup and thus the dish just tasted very grainy. It was edible but I feel that it was not enjoyable at all. The chef seemed a bit showy while preparing the dish and he was also multi tasking with many things at once, washing.. cooking… replenishing things… not sure about all the 5 star reviews but I felt that the ramen was not nice at all. Will definitely not return nor recommend.

This ramen shop deserves more stars than it currently has. I first tried another shop on the block where I waited for about 2 hours and received only mediocre ramen.
