De Bisschopsmolen is a historic watermill located just a short walk from the city center, along the Jeker River. The mill has been in operation since the seventh century and now houses a popular bakery where visitors can purchase delicious breads and pastries or enjoy them in the cozy cafe. Guided tours of the mill are also available for those interested in learning about its millennium-old flour production process.
Must visit. The coffee, sandwiches, people, atmosphere ... Everything is amazing here. Even the locality is right out of an 80s postcard. But, reserve a table. The place is extremely crowded and everyone wants to eat here.

Visited couple times and i won’t be lying when i said: reserve before coming (if possible) because the place is small yet everyone wants to eat vlaai here. Other pastries also available (broodjeworst, also a favorite from this place). Recommended to pack some pieces home for your loved ones because you haven’t visited maastricht without vlaai from their place.

Just ask politely and you’ll likely find a spot. What makes this place even more special is its setting. Adjacent to and behind the cafeteria lies the Wasserrad, a beautifully preserved watermill that underscores the historical charm of the location. It’s well worth taking a moment to explore. I am no drinker by any stretch of the imagination and never go out drinking in the UK because basically - pubs - which ones are left because a lot of them are closing down, are not the most inviting of places, especially if you are not a local. They can be quite hostile if you are not a local but when walking past Zondag one night during my stay in Maastricht. I saw happy people having a nice time on the outside tables. So, I thought I would take a chance and I ventured inside to have a beer. The bar was staffed by three friendly guys, service was swift and the beer was good. My beer was actually served in an old fashioned British pint glass with a handle - something I hadn't seen for at least 30 years in a British pub. So, I was taken to my environs immediately. So, when it came to payment. Their card reader wouldn't take my card and the friendly barman shrugged and said cheerfully 'We have problems with British debit cards unfortunately' and I said 'well, I have a Chinese debit card, let's try that!' which made him laugh, it made me laugh too as it had less chance of working than my British card but actually, the Chinese debit card kind of works OK in the Netherlands but it is a bit more hit-and-miss than my British bank card as you can imagine (for the record - we tried the Chinese debit card - it didn't work!). The way the bar staff at Zondag dealt with this problem and the solutions they offered impressed me so much that I am on here writing about it and am happy to give them full marks for their service, friendliness and understanding. Thankfully, my British debit card started motoring on the second attempt and I managed to pay for my drinks. What would have happened in the UK if that happened? Maybe death, dirty looks, comments about my dearly missed, deceased mother? More than likely! The chilled out response from my friends in Zondag? Doubtful! So, full marks to all staff at Zondag! Thank you for your understanding and may you have many more happy evenings with your wonderful patrons.

A nice place to grab a drink and a bite to eat. I really appreciate their wide selection of non-alcoholic drinks - it's not your usual Coke & Sprite. Their kombucha is especially tasty (really sour). The food is also pretty decent, I tried the tortilla de patatas - it was nice but a bit bland and cold. The only thing that really bothers me is their service. I went several times and they barely come to your table once. After that they never come back, even if they are not busy at all. It seems that they do not really care about the customers, which I find annoying. If it weren't for their bad service, the place itself deserves 5 stars. Unfortunately, it ruins the whole experience, so if you don't mind, give it a try.

This is one of our favorite restaurants in Maastricht. The service is always warm & friendly - attentive without being cloying - and the food delicious. The menu varies slightly by season and they always offer seasonal specials. My husband generally chooses the toast poulet & avocado or the Caesar salad and I am obsessed with the flammkuchen Gruyère and their French onion soup. Honestly, though, you can’t go wrong here. Every single thing we’ve ordered here has been a hit with us.

I ate at this restaurant with a friend. We payed separately as our company paid for our lunch. I asked my receipt (not the total) but for these I paid. The guy that serviced us told me that I have to send an e-mail in order the logistic part of their company see their system and that they have the ability for this. I sent an e-mail and they replied that this is not possible. Now I have to apology to my company because of their unawareness. They do not even know between the staff what they can do and what not!!!

One of the best coffee shops in town! Super cozy, great coffee, and mouthwatering desserts. The place may look like a coffee shop, but it’s much more. It’s a place to sip great coffee, enjoy delicious cakes, eat, and work (available separate stations for laptops).. staff were super friendly and helpful! Also a the restaurant and toilets were very clean. I have saved the place and will definitely visit KOFFIE next time I visit Maastricht. Great work KOFFIE bij Joost en Maartje! Until next time

KOFFIE is a great place to sit down for a drink with friends or to grab a coffee to go. The coffee is strong, yet has a lovely earthy taste that’s best enjoyed with regular or plant-based milk. It’s also excellent as an iced option on a hot summer day. We also tried the carrot cake, which was exceptional — moist and flavourful, with warm cinnamon notes. The citrusy buttercream on top is creamy and rich in flavour, and it pairs well with the chopped walnuts, which add a nice crunch and texture. The staff are extremely friendly, and the atmosphere inside the café is pleasant. They even have dedicated laptop spaces with plugs for studying or work. It may get a bit noisy at times, but most people there don’t seem to mind.

The trendy lunchroom is particularly popular for its breakfast service on Sundays, serving up delicious rolls with cheese and Serrano ham, as well as freshly baked croissants and pain au chocolat.
Delicious gluten free tuna melt. There were several options for gluten free food. Very attentive, welcoming and good service. I highly recommend it for breakfast and lunch.

SoDelicious is so good! We had a breakfast there and everything was perfect. All baked stuff was so fresh, I especially enjoyed a croissant 🥐 with homemade jam. The staff was nice and welcoming, we were seated immediately even without a reservation.

SoDelicous in Maastricht beautifully combines a restaurant with a bakery. This was a great stop for brunch and pastries. The restaurant decor is simply stunning and the staff were super friendly and were more than willing to speak English. The coffee is good, we ordered flat whites and they have plant-based milk options available. For food we ordered the pancakes served with maple syrup and fruit. They were delicious and light with some crispness on the outside. We also ordered the Luxe Onbijt wich contains scrambled eggs, bread, French toast, a croissant, youghurt with fruit and muesli and a glass or orange juice. Absolutely everything in this was divine, the French toast was particularly good. To end off our morning we had lovely mimosas. SoDelicious was a great stop and I will definitely be back to sample goods from the bakery!

Great spot to grab some delicious lunch or breakfast. The food was very good and the prices were fairly decent for Maastricht standards. We loved the attention to detail such as the freshly baked mini cakes near our coffee. It took some time for our table to get served in the beginning but everything went smoothly after the initial interaction. They also have a bakery with great looking cakes so I would definitely check them out if in the area and in need of some sweets or a nice meal.

Nice tasty vlaai, we had 2 minis (personal size): rice vlaai and apricot vlaai. I love the rice one, soft crust, very classic, not overly seeet.. the apricot is a bit too sour for my taste but for sure it depends on your liking. The woman working there on Saturday 14 December was very rude. When I said I wanted to wait for a place to sit she said in a very arrogant way that they "Only served until 16:00 hrs" it was only 15:00 hrs. 😕 We wanted to buy something, but her replies were so out of touch like she was annoyed or something so the group decided that it was not worth it to wait for a table to stay in such unfriendly environment.

I went there to buy the famous vlaai from Limburg. But only had the picture from the Rijstevlaai (my favourite). The prices are good taking into account quality ans size. (Rijstevlaai = 5.50€; fruit vlaai = 4.25€). The service is really nice and friendly. The only thing I found really inappropriate is the fact that people working there touch the food with their hands without gloves, which is not hygienic. I recommend to book the cakes the day before so you'll enjoy it with no hesitation.

Excellent bakery! Everything we tried was great. They even had complementary espresso! However if you get an espresso make sure you only take one. The woman got very angry at me when I came back for a second one. I’ve never even seen an angry Dutch person before, they are all so nice. Bad on me I guess, guest coming in to their beautiful city upsetting the social order. Me: one star. Them: five stars!

Fruit tarts in my pics were some kind of heaven - unusually crispy sugar crystal crunchy outer pastry, delicious cream filling, glossy fruits and lovely fresh mandarin segments on top for €4.5? - first one was so good we ordered a second which was the last one on the shelf. Serve yourself coffee in a paper cup. Coffee filled to about half full - espresso may be smaller. You can sit inside to eat on a narrow bench for two if tables outside are wet after rain - busy shop looks like all women making beautiful pastries.

A must go-to when you are in Maastricht. The vlaai is delicious and all the pastries are just amazing. I’ve had the peach and the cherry vlaai and they are so yummy. I’ve bought other bigger cakes for birthdays and every one of them is just yummier than the previous one. The service is great, the patio seating is perfect and they give you free coffee for the purchase too! It’s very lovely to see the different decorations they have depending on the season

One of the best bakkerij in Maastricht. They have very good fresh bread, croissants, pain au chocolate and Vlaai of course. You have to take a token and wait in line on Sundays and the weekends. They have the best pudding and Rice Vlaai in the city. There are also seasonal Vlaai which use seasonal fruits and ingredients. I would suggest ordering in advance if you need larger quantities

I used to live in the neighborhood and this was always my go-to spot for vlaai. In my opinion, it’s hands down the best vlaai in the city! My absolute favorite filling is the apricot with pudding — so good. Their croissants and pains au chocolat are also absolutely delicious. One tip: if you’re visiting on Dutch Father’s/Mother’s Day or other big celebration days, it’s best to order in advance or be prepared to wait in line, as the selection can be limited. But trust me—it’s worth the wait!

we really wanted to try rice vlaai and kept seeing recommendations for this bakery, so we stopped by in the morning. we ended up buying a whole (small) one since they were freshly baked, still warm, and couldn't be cut yet. the person who helped us was very nice about this it was tasty enough, bit bland for my tastes, although i suppose we haven't had any other rice vlaai to compare to 😅 we also got a sausage roll here for breakfast and i was extremely dismayed when i bit into it as it was ice cold. probably straight from the fridge. i've never experienced this from a bakery before - usually if something is cold, they'll ask if you'd like to heat it up, right?

I’ve been living in Maastricht for 6 years now and every time one of my friends or my family visit me here, I take them here for brunch. The atmosphere is super cozy, the personnel is incredibly nice and the food is delicious! I also love the variety that they bring in the menu through seasonal specials, and no matter if you eat anything or if you have any restrictions (vegan, vegetarian, gluten, allergies etc), you will find great options on their menu. It can get a bit packed around 10/11 am though, so I would recommend coming earlier for brunch☺️

I was vacationing and introduced here by my friends who are locals. I was so impressed by the shop, the friendly service, the deliciously warm and buttery cookies and presentation. Loved that they come with instructions for reheating to perfection and storage. You can tell the owner cares about the quality of the product and your enjoyment. I ended up returning for cookies for a dinner I was hosting and made a special trip to bring some back to Los Angeles. Everyone loved them! These are so needed here! What a disappointment! The panini are pre-made by Voncken and come in labelled plastic bags. You’re not getting an artisanal, high-quality product here, but rather a very basic supermarket-style ham and cheese panini. The interior and products in the shop give off a high-quality delicatessen vibe, which unfortunately does not translate into the panini itself. The bread is bland, the ham and cheese are just okay, and the nearly €10 price tag is completely unjustified for what you get. In addition , it took about 15 minutes to get our order — and this was the very first one to be made. To be fair, the delay wasn’t due to inefficiency but simply because the cheese takes so long to melt. On the positive side, the interior design is very charming, and the shop sells a wide range of delicacy products and fresh breads (though also delivered by Voncken, not baked in-house). To conclude: the panini are not worth the hype. We can’t judge the other products, because we did not try them.

Was gifted a lovely little red velvet cake for my birthday, the sponge and cream cheese filling was delicious! And the decoration so cute :) The only thing I would suggest to improve on is the buttercream. Even just refrigerated normally it goes far too hard. I prefer a creamier texture (to match the rest of the cakes’ texture), as most mouthfuls were soft cake, soft cream cheese and then a chunk of hard buttercream. Other than that, I do love the value and other bakes this bakery creates - the cookies are really good!

Best sourdough bread and bagels I've had in years!! They gave me a cookie to taste and the taste was irresistible! I started with a nibble which quickly turned to gobbling the (large) cookie down in one sitting. The staff is so friendly and clearly excited about their new endeavour. Bought two slices of Basque cheesecake for 11€. The cake had completely horrible consistency and fell apart when they were putting it in a box. It was also, for some reason, very salty and close to inedible. To be fair, I had tried the focaccia here before, which was fine, but I expect a batch with such obvious low quality not to be sold to paying customers, especially for this price.

I went to this bakery at 9 in the morning. The lady was nice and helpful. I bought 2 pain au chocolat and a sourdough baguette, which came to a total of 6,50€. To my surprise (considering the high price) both “pains au chocolat” were stale and filled with chocolate as well as a strange sugar filling which wasn’t pleasant. The taste was awful and off putting. The sourdough bread was stale as well and stretchy. This is simply unacceptable for 6.5€ and at 9 in the morning. I’d love an explanation as to why none of the overpriced products are fresh (and not a generic answer saying they want to do better and then never do…)

Bakkerij Paulissen is a charming bakery offering a variety of quality bread, traditional pies (vlaai), and cakes. The friendly staff provides excellent service and can even prepare fresh sandwiches. It's a great spot to grab breakfast with loved ones, and their fruit vlaai comes highly recommended. While the bakery offers an extensive selection of bread, some visitors have noted the absence of milk alternatives for drinks. Nonetheless, it remains a popular choice due to its good service and delicious products.
At the end of a long trip all around Europe we decided to head into Netherlands from Belgium for breakfast to add another country to the list on the way back to Dunkirk. We found the Bakery through Google maps as the only place that seemed to be open for breakfast early Sunday morning and in easy reach of the Belgian border. It was all perfect, the best breakfast of pastries and coffee we had in our two weeks away and the staff were friendly and helpful speaking better English than we do and definitely better than our Dutch! We stocked up with more pastries for the road. Toilets were lovely and clean as well. Perfect place to pop in for breakfast, delighted we did!

The sign boasting "The best croissants" piqued my curiosity, and I was pleasantly surprised to find that the claim held true. The croissants were truly exceptional, prompting me to return for more of their tempting creations.
Came across this place slightly a bit randomly as its usually not a place I stop, but today I did. The cakes looked amazing, but I was mainly lured in and curious because they wrote "The best croissants" on a sign outside. When you make such a bold statement it better have some truth to it, and... It did!! Really great croissants and I will certainly come back to try more of their creations.
